Description

A hearty and comforting cheesy hamburger potato soup that warms you from the inside out, perfect for cold winter evenings.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Start by heating the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until softened, about 3-4 minutes.
  2. Next, add the ground beef to the pot. Break it up as it cooks, browning it evenly. Drain any excess grease.
  3. Now stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to low. Simmer for 15-20 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, pour in the milk and heavy cream. Stir well to combine, heating through without boiling.
  5. Gradually add the shredded cheddar cheese, stirring constantly until melted and smooth.
  6. After the cheese has melted, season with salt and pepper to taste and let it simmer for an additional 5-10 minutes.
  7. Finally, ladle the soup into bowls and serve hot, garnished with extra cheese or toppings if desired.

Notes

For a creamier soup, increase the milk and cream ratio. Add vegetables like carrots or spinach for extra nutrition.
