A hearty and comforting cheesy hamburger potato soup that warms you from the inside out, perfect for cold winter evenings.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup heavy cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Start by heating the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until softened, about 3-4 minutes.
- Next, add the ground beef to the pot. Break it up as it cooks, browning it evenly. Drain any excess grease.
- Now stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to low. Simmer for 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, pour in the milk and heavy cream. Stir well to combine, heating through without boiling.
- Gradually add the shredded cheddar cheese, stirring constantly until melted and smooth.
- After the cheese has melted, season with salt and pepper to taste and let it simmer for an additional 5-10 minutes.
- Finally, ladle the soup into bowls and serve hot, garnished with extra cheese or toppings if desired.
Notes
For a creamier soup, increase the milk and cream ratio. Add vegetables like carrots or spinach for extra nutrition.
