Description
A comforting cheesy hamburger potato casserole featuring layers of ground beef, tender potatoes, and gooey cheese, perfect for family gatherings.
Ingredients
- 1 ½ lbs ground beef (or ground turkey)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 5 – 6 medium russet potatoes (thinly sliced, about 1/8 inch)
- 2 cups shredded cheddar cheese (divided)
- 1 cup shredded mozzarella (optional, for extra meltiness)
- 1 10.5 oz can cream of mushroom soup (or cream of chicken)
- 1 cup milk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil or butter (for greasing the dish)
Instructions
- Preheat your oven: Heat to 350°F (175°C) and grease a 9×13 inch baking dish with olive oil or butter.
- Cook beef mixture: In a skillet, brown the ground beef and chopped onion over medium heat until fully cooked, about 7-10 minutes. Drain excess fat. Stir in garlic, salt, pepper, and paprika.
- Make the sauce: In a bowl, whisk together cream of mushroom soup and milk until smooth.
- Assemble the casserole: Layer half of the sliced potatoes on the bottom of the greased baking dish. Spread half of the beef mixture over the potatoes. Pour half of the sauce over the beef and sprinkle with 1 cup of cheddar cheese. Repeat the layers with the remaining potatoes, beef mixture, and sauce, finishing with the remaining cheddar and optional mozzarella cheese on top.
- Bake covered: Cover the dish with aluminum foil and bake for 45 minutes.
- Bake uncovered: Remove foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
- Serve: Allow the casserole to rest for 5 minutes before serving.
Notes
This casserole pairs wonderfully with a green salad or steamed veggies. It can be stored in an airtight container in the fridge for up to 3-4 days.
