Description

A comforting dish of zucchini boats filled with savory ground beef, marinara sauce, and gooey mozzarella cheese.

Ingredients

  • 2 medium zucchinis
  • 1 pound ground beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides to create ‘boats.’
  3. In a skillet, heat olive oil over medium heat. Add diced onions and garlic; sauté until softened.
  4. Add ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in marinara sauce and season with salt and pepper.
  6. Fill each zucchini boat with the beef mixture, then top with shredded mozzarella cheese.
  7. Place the boats on a baking sheet and bake for 20-25 minutes or until the zucchini is tender and the cheese is melted and bubbly.
  8. Serve warm and enjoy your healthy dinner!

Notes

These zucchini boats are versatile; feel free to swap ground beef for ground turkey or add vegetables for variation.
