Description

This cheesy ground beef and rice casserole is a comforting dish that combines seasoned ground beef, creamy sauce, and gooey cheddar cheese for a perfect weeknight meal.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. In a large skillet over medium heat, brown the ground beef and diced onion until the meat is cooked through and the onion softens. Be sure to drain any excess fat.
  2. Add minced garlic, stirring for about 30 seconds until fragrant.
  3. In a separate bowl, whisk together the cream of mushroom soup with your choice of milk or broth, paprika, salt, and pepper.
  4. In the prepared baking dish, combine the cooked rice, beef mixture, half of the shredded cheese, and creamy sauce. Mix well.
  5. Sprinkle the remaining cheese on top. Cover the dish with foil and bake for 20 minutes.
  6. Remove the foil, then bake for another 10 minutes until the cheese is golden and bubbly.
  7. For an even crispier topping, broil the casserole for an extra 2 minutes.
  8. Serve hot and garnish with chopped parsley if desired.

Notes

For a spicier version, consider adding crushed red pepper or diced jalapeños. Leftover cooked rice can also save time in preparation.
