Ingredients
- 1 1/2 lb (680 g) s (4 cup (960 ml) s) baby potatoes, cut in halves
- 1 lb (454 g) boneless & skinless chicken breasts, cut into 7-8 cutlets
- 1 pint (2 cup (480 ml) s) grape tomatoes
- 4 large garlic cloves, grated
- 1/4 cup (60 ml) olive oil, extra virgin
- 1 lemon, juice of
- 2 tsp (10 ml) oregano, dried
- 1 1/4 tsp (6 ml) salt
- Ground black pepper, to taste
- 2-3 tbsp (38 ml) dill or parsley, finely chopped
Instructions
- Set your oven to a temperature of 425°F to preheat.
- In a large 9 x 13 baking dish, place the potatoes, chicken, tomatoes, garlic, olive oil, lemon juice, oregano, salt, and pepper. Use your hands to combine everything thoroughly, then spread it out evenly in a single layer.
- Place the dish on the bottom rack of the oven and cook uncovered for 30 minutes. Afterward, switch to broiling for an additional 5 minutes.
- Take the dish out of the oven, carefully mix everything with a spoon, and garnish with freshly chopped dill or parsley. Serve while hot.
