Description

A delightful one-pan meal that combines ground beef, zesty enchilada sauce, and elbow macaroni, topped with gooey melted cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups water
  • 1 can (15 oz) enchilada sauce
  • 2 cups elbow macaroni
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste


Instructions

  1. In a large skillet, brown the ground beef and onion over medium heat until the meat is no longer pink.
  2. Drain excess fat.
  3. Stir in water, enchilada sauce, macaroni, garlic powder, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the pasta is cooked through.
  5. Remove from heat and stir in shredded cheddar cheese until melted.
  6. Serve hot.

Notes

Customize the spice level by adding diced jalapeños or extra chili powder. For creaminess, mix in sour cream before serving.
