Description

Discover how to make a mouthwatering Cheesy Enchilada Casserole that will have your taste buds dancing! Perfect for a family dinner or potluck.

Ingredients

  • 10 corn tortillas (250 g) cut into four strips
  • 2 1/2 cups (300 g) shredded cheese (cheddar, Monterey Jack, or a blend)
  • 2 cups (475 ml) tomato sauce or mole sauce, homemade or store-bought
  • 1/4 cup (15 g) chopped fresh cilantro for garnish
  • 1 green onion, sliced for garnish

Instructions

  1. Set your oven to heat up to 375°F.
  2. Lightly coat a square baking dish with oil.
  3. To start, pour ⅓ cup of sauce across the bottom of the dish.
  4. Next, lay down a layer of tortilla strips, making sure they overlap slightly.
  5. After that, scatter some cheese on top.
  6. Continue layering the sauce, tortillas, and cheese in this manner until everything is used, ending with a generous layer of cheese on top.
  7. Cover the dish with foil and place it in the oven for 20 minutes.
  8. Take off the foil and bake for an additional 10 minutes, or until the cheese is bubbling and the edges are golden brown.
  9. Allow the casserole to rest for 5 minutes before cutting it into portions.
  10. Before serving, sprinkle with cilantro and green onion.

Notes

  • Consider using a blend of cheddar and Monterey Jack cheese for a more flavorful dish. Mix diced jalapeños into the layers for a spicy kick. Experiment with homemade sauces like roasted tomato salsa or tangy tomatillo sauce for variety.
