Ingredients
- 10 corn tortillas (250 g) cut into four strips
- 2 1/2 cups (300 g) shredded cheese (cheddar, Monterey Jack, or a blend)
- 2 cups (475 ml) tomato sauce or mole sauce, homemade or store-bought
- 1/4 cup (15 g) chopped fresh cilantro for garnish
- 1 green onion, sliced for garnish
Instructions
- Set your oven to heat up to 375°F.
- Lightly coat a square baking dish with oil.
- To start, pour ⅓ cup of sauce across the bottom of the dish.
- Next, lay down a layer of tortilla strips, making sure they overlap slightly.
- After that, scatter some cheese on top.
- Continue layering the sauce, tortillas, and cheese in this manner until everything is used, ending with a generous layer of cheese on top.
- Cover the dish with foil and place it in the oven for 20 minutes.
- Take off the foil and bake for an additional 10 minutes, or until the cheese is bubbling and the edges are golden brown.
- Allow the casserole to rest for 5 minutes before cutting it into portions.
- Before serving, sprinkle with cilantro and green onion.
