Ingredients

  • ¼ cup unsalted butter
  • ⅓ cup all-purpose flour or gluten-free flour blend
  • 3 cups milk (2% recommended)
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon fine salt
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • 8 ounces shredded sharp cheddar cheese, plus more for topping
  • 1 (16-ounce) bag frozen broccoli florets
  • 12 ounces cooked chicken, shredded
  • 3 cups cooked rice (basmati, jasmine, or brown rice)


Instructions

  1. Place a large skillet over medium-high heat and melt the butter.
  2. Once melted, sprinkle the flour and whisk continuously for 30 seconds.
  3. Lower the temperature and add the milk gradually, one cup at a time, whisking well between each addition.
  4. Whisk in the broth and incorporate the garlic powder, onion powder, fine salt, Dijon mustard, dried thyme, paprika, and black pepper.
  5. Turn the heat back up to medium-high and let the mixture come to a boil for 1 minute, stirring constantly until it thickens, then remove from heat.
  6. Stir in the shredded cheese until it melts and becomes smooth.
  7. Return the skillet to medium-high heat and mix in the frozen broccoli, cooked chicken, and rice.
  8. Cook while stirring occasionally for about 8-10 minutes until the broccoli is heated through and the rice is tender.
  9. If desired, top with additional cheese and cover for 2-3 minutes until melted.
  10. Uncover, let sit for about 5-10 minutes to thicken, garnish, and serve.

Notes

For added texture, consider mixing in different types of cheese or adding breadcrumbs for a crispy topping. Adjust seasoning to taste.
