Ingredients
- ¼ cup unsalted butter
- ⅓ cup all-purpose flour or gluten-free flour blend
- 3 cups milk (2% recommended)
- 1 cup low-sodium chicken or vegetable broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon fine salt
- 1 teaspoon Dijon mustard
- ½ teaspoon dried thyme
- ¼ teaspoon paprika
- ¼ teaspoon black pepper
- 8 ounces shredded sharp cheddar cheese, plus more for topping
- 1 (16-ounce) bag frozen broccoli florets
- 12 ounces cooked chicken, shredded
- 3 cups cooked rice (basmati, jasmine, or brown rice)
Instructions
- Place a large skillet over medium-high heat and melt the butter.
- Once melted, sprinkle the flour and whisk continuously for 30 seconds.
- Lower the temperature and add the milk gradually, one cup at a time, whisking well between each addition.
- Whisk in the broth and incorporate the garlic powder, onion powder, fine salt, Dijon mustard, dried thyme, paprika, and black pepper.
- Turn the heat back up to medium-high and let the mixture come to a boil for 1 minute, stirring constantly until it thickens, then remove from heat.
- Stir in the shredded cheese until it melts and becomes smooth.
- Return the skillet to medium-high heat and mix in the frozen broccoli, cooked chicken, and rice.
- Cook while stirring occasionally for about 8-10 minutes until the broccoli is heated through and the rice is tender.
- If desired, top with additional cheese and cover for 2-3 minutes until melted.
- Uncover, let sit for about 5-10 minutes to thicken, garnish, and serve.
Notes
For added texture, consider mixing in different types of cheese or adding breadcrumbs for a crispy topping. Adjust seasoning to taste.
