Ingredients

  • – 2 large Flour Tortillas (12″) (30 cm)
  • – 2 cups (480 ml) Shredded Chicken or Shredded Beef
  • – 1 tbsp (15 ml). Vegetable Oil
  • – 1/4 cup (60 ml) Hot Sauce
  • – 1/4 tsp (1 ml). Garlic Powder
  • – Salt & Cracked Black Pepper to taste
  • – 1/2 cup (120 ml) Shredded Cheddar Cheese
  • – 1/4 cup (60 ml) Ranch Dressing
  • – 1/4 cup (60 ml) chopped Red Onions
  • – 1/4 cup (60 ml) chopped Green Onions
  • – 1/4 cup (60 ml) chopped Dill Pickles
  • – 3 cups (720 ml) chopped Romaine Lettuce
  • – handful Micogreens optional


Instructions

  1. In a mixing bowl, shred the chicken thoroughly. In another small bowl, mix together the vegetable oil, hot sauce, garlic powder, and a dash of cracked black pepper until they are well blended. Pour this spicy mixture over the shredded chicken and ensure the chicken is evenly coated.
  2. Add the shredded cheddar cheese, red onions, green onions, chopped dill pickles, and ranch dressing to the chicken mixture. Taste, and if desired, add a bit of salt and pepper, then set aside.
  3. Heat the flour tortillas in the microwave for about 20 seconds. Lay the tortillas flat. Distribute the chopped romaine lettuce evenly along the center of each tortilla.
  4. Spoon approximately one cup of the chicken mixture over the romaine on each tortilla, spreading it out evenly.
  5. Optionally, add microgreens on top if you like, then roll up the tortillas tightly in a burrito fashion to create two wraps. Slice each wrap in half and serve.

Notes

  • For a healthier twist, opt for whole wheat or spinach tortillas instead of flour.
  • Enhance the freshness and flavor by adding diced tomatoes or avocado.
  • To up the heat, increase hot sauce or add a dash of cayenne pepper to the chicken mixture.
