Description

A comforting creamy beef and rice casserole that brings warmth and nostalgia to your table.

Ingredients

  • 1 pound ground beef
  • 1 cup long grain rice
  • 1/2 yellow onion, diced
  • 1-2 cups shredded cheese
  • 2 cans (10 oz each) cream of mushroom soup
  • 1/2 cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Cook the rice according to the package instructions until fully cooked. Set aside.
  2. Preheat your oven to 375°F (190°C).
  3. In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up into crumbles as it cooks. Drain any excess fat.
  4. In a large mixing bowl, combine the cream of mushroom soup and sour cream, stirring until smooth.
  5. Add the cooked rice, browned ground beef, and diced onion to the mixing bowl with the sauce. Stir until well combined.
  6. Season the mixture with salt and pepper to taste.
  7. Transfer the mixture to a greased baking dish, spreading it out evenly.
  8. Sprinkle shredded cheese evenly over the top of the casserole.
  9. Bake in the preheated oven for 25 minutes, or until the cheese is fully melted and bubbly.
  10. Remove from the oven and let it rest for a few minutes before serving. Enjoy!

Notes

Consider adding herbs or spices for extra flavor. Letting the casserole cool for a few minutes before serving helps layers to set.
