Ingredients
- 1 pound ground beef
- 1 cup long grain rice
- 1/2 yellow onion, diced
- 1-2 cups shredded cheese
- 2 cans (10 oz each) cream of mushroom soup
- 1/2 cup sour cream
- Salt and pepper, to taste
Instructions
- Cook the rice according to the package instructions until fully cooked. Set aside.
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up into crumbles as it cooks. Drain any excess fat.
- In a large mixing bowl, combine the cream of mushroom soup and sour cream, stirring until smooth.
- Add the cooked rice, browned ground beef, and diced onion to the mixing bowl with the sauce. Stir until well combined.
- Season the mixture with salt and pepper to taste.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Sprinkle shredded cheese evenly over the top of the casserole.
- Bake in the preheated oven for 25 minutes, or until the cheese is fully melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving. Enjoy!
