Ingredients
- 1 lb ground beef
- 2 cups potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: chives for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion and minced garlic to the pot, sauté until softened.
- Stir in the diced potatoes and beef broth. Bring to a boil and then reduce to a simmer.
- Cook until the potatoes are tender, about 15-20 minutes.
- Lower the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with chives if desired.
Notes
For a thicker soup, consider adding a cornstarch slurry during the final stages of cooking. Customize your cheese for added flavor.
