Description

A comforting and warm soup made with ground beef, potatoes, and rich cheddar cheese; perfect for chilly evenings.


Ingredients

  • 1 lb ground beef
  • 2 cups potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: chives for garnish


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot, sauté until softened.
  3. Stir in the diced potatoes and beef broth. Bring to a boil and then reduce to a simmer.
  4. Cook until the potatoes are tender, about 15-20 minutes.
  5. Lower the heat and stir in the heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chives if desired.
