Ingredients

  • 4 tbsp (60 ml) vegetable oil, divided
  • 5 lb ground beef (225 g)
  • 75 cup chopped onion (180 ml)
  • 75 cup shredded carrots (180 ml)
  • 75 cup chopped celery (180 ml)
  • 1 tsp (5 ml) dried basil
  • 1 tsp (5 ml) dried parsley
  • 4 cups cubed potatoes (600 g)
  • 3 cups chicken broth (720 ml)
  • 25 cup all-purpose flour (30 g)
  • 5 cups milk (360 ml)
  • 2 cups cubed beef sausage (225 g)
  • 25 cup (60 ml) plain yogurt
  • sliced green onions for garnish


Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pot on medium heat; incorporate ground beef, onion, carrots, and celery. Stir and cook until the beef is browned and crumbly, about 5 to 7 minutes.
  2. Mix in the basil and parsley. Add the potatoes and chicken broth, bringing the mixture to a boil; lower the heat and let it simmer until the potatoes are soft, around 10 to 12 minutes.
  3. In a separate small saucepan, warm the remaining 3 tablespoons of vegetable oil over medium heat. Add the flour and whisk until the mixture is smooth, roughly 1 minute. Slowly incorporate the milk, whisking continuously, and let it simmer until the sauce becomes thick and smooth.
  4. Combine the sauce with the soup, stirring all the while. Bring the mixture to a boil; lower the heat and add the beef sausage until it melts. Mix in the plain yogurt, stirring until it’s just warmed through.
  5. Serve piping hot, topped with sliced green onions. Enjoy!
