- 25 cup plain yogurt (60g)
Instructions
- In a large pot over medium heat, melt 1 tablespoon of butter. Add the ground beef, along with the onion, carrots, and celery. Cook, stirring frequently, until the beef is browned and breaks apart easily, about 5 to 7 minutes.
- Mix in the basil and parsley. Introduce the potatoes and broth, then increase the heat to bring the mixture to a boil. Lower the heat and let it simmer until the potatoes are soft, approximately 10 to 12 minutes.
- In a separate small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Incorporate the flour and whisk until you achieve a smooth consistency, roughly 1 minute. Slowly pour in the milk while whisking, allowing the mixture to simmer and thicken.
- Combine the sauce with the soup, stirring continuously. Let it come to a boil, then decrease the heat to low. Mix in the cheese until it melts completely. Add the plain yogurt, stirring until it is just warmed through.
