Description

A simple yet elegant dish combining shrimp, penne pasta, and fresh spinach, enriched with cheese for a comforting meal.


Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup cheese (mozzarella or parmesan)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)


Instructions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and cook until they are pink and opaque, about 3-5 minutes.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the cooked penne pasta to the skillet and mix well.
  6. Sprinkle cheese over the pasta and stir until melted.
  7. Season with salt, pepper, and red pepper flakes if desired.
  8. Serve immediately.

Notes

For a creamier texture, reserve a bit of pasta water before draining and add it to the mixture.
