A simple yet elegant dish combining shrimp, penne pasta, and fresh spinach, enriched with cheese for a comforting meal.
Ingredients
- 8 oz penne pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup cheese (mozzarella or parmesan)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Cook the penne pasta according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the shrimp to the skillet and cook until they are pink and opaque, about 3-5 minutes.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked penne pasta to the skillet and mix well.
- Sprinkle cheese over the pasta and stir until melted.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve immediately.
Notes
For a creamier texture, reserve a bit of pasta water before draining and add it to the mixture.
