Description

A delightful pie featuring sweet corn and sharp cheddar, perfect for potlucks and gatherings.


Ingredients

  • 2 cups fresh or frozen sweet corn
  • 1 cup sharp cheddar cheese, shredded
  • 1 pie crust (store-bought or homemade, optional)
  • 4 large eggs
  • 1 cup heavy cream or milk
  • 1/4 cup chopped fresh herbs (such as basil or thyme)
  • Salt and pepper, to taste
  • Butter for greasing the pie dish


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a pie dish with butter, or place the pie crust in the dish if using.
  2. Combine the sweet corn, cheddar cheese, and herbs in a mixing bowl.
  3. Whisk together the eggs, heavy cream or milk, salt, and pepper in another bowl.
  4. Pour the egg mixture over the corn and cheese mixture, and stir until combined.
  5. If using a crust, pour the mixture into the crust. If not using a crust, pour directly into a greased pie dish.
  6. Bake for 35-40 minutes, or until the top is golden and set.
  7. Let it cool slightly before serving. Enjoy at potlucks, picnics, or holiday gatherings!

Notes

Experiment with different cheese types for added flavor. Roasting the corn enhances sweetness.
