Learn how to make a delicious Cauliflower Fried Rice Stir Fry at home with this easy recipe. Packed with flavor and veggies, it’s a healthy twist on a classic dish!
Ingredients
- Vegetable oil
- 2 large eggs, beaten
- Salt
- 1 cup (240 ml) chopped scallions, light and green parts separated (you’ll need 5-6 scallions)
- 3 garlic cloves, minced
- 1 tablespoon (15 ml) finely chopped fresh ginger, from a 1-inch knob (see note)
- One 2-lb head cauliflower (or 2 pounds (907 g) “ready to cook” cauliflower rice), thawed if frozen
- 4-5 tablespoons (60-75 ml) soy sauce (use gluten-free if needed)
- 1/4 teaspoon (1 ml) crushed red pepper flakes
- 1 teaspoon (5 ml) sugar
- 1 cup (240 ml) frozen peas and carrots
- 1 teaspoon (5 ml) rice vinegar
- 1 teaspoon (5 ml) sesame oil
- ¼ cup (30 g) chopped almonds or other nuts (optional)
Instructions
- Prepare the cauliflower by either pulsing it in a food processor with the grating attachment or using a box or handheld grater with large holes. Set it aside for now. If you have cauliflower rice that’s ready to cook, skip this step.
- Warm 2 teaspoons of vegetable oil in a large nonstick frying pan over medium heat. Pour in the beaten eggs with a dash of salt and stir until the eggs are fully cooked. Move them to a small plate and set aside. Clean the pan.
- Pour 3 tablespoons of vegetable oil back into the skillet and place it over medium heat. Add the light parts of the scallions, minced garlic, and ginger. Stir frequently until they soften without browning, which should take about 3 to 4 minutes.
- Introduce the grated cauliflower to the pan along with 4 tablespoons of soy sauce, red pepper flakes, sugar, and a pinch of salt. Stir regularly for around 3 minutes.
- Add the peas and carrots, and continue stirring until the cauliflower is cooked yet still slightly firm and the vegetables are heated through.
- Mix in the rice vinegar, sesame oil, dark green parts of the scallions, nuts if desired, and the cooked eggs. Taste and adjust the flavors, adding more soy sauce if necessary. Serve while hot.
Notes
- To enhance the flavor and add a satisfying crunch, sprinkle chopped almonds or your preferred nuts on top of the finished dish.
- For a hint of sweetness and tang, drizzle a bit of extra rice vinegar over the cauliflower fried rice before serving.
- Ensure the cauliflower is cooked until tender yet slightly firm to maintain a pleasant texture in the dish.
