Crunchy and soft carrot potato tots made from simple ingredients, perfect as a snack or side dish.
Ingredients
- 1 medium potato (about 200g)
- 2 medium carrots (about 150-200g)
- ½ cup shredded cheese (mild cheddar or mozzarella)
Instructions
- Prepare and cook the vegetables: Peel the potato and carrots, then chop them into small pieces. Set up your steamer. Steam for 10-15 minutes until soft.
- Mash the vegetables: Transfer the cooked vegetables to a mixing bowl. Use a potato masher or fork to mash them while warm.
- Add the cheese: Mix in ½ cup of shredded cheese until well combined. The heat helps melt the cheese, blending it smoothly into the vegetables.
- Form the tots: Once combined, cool the mixture slightly. Shape it into small cylindrical or ball forms, about 1 tablespoon each.
- Cook the tots: Preheat your oven to 180°C. Place the tots on a lined baking sheet and bake for 15-20 minutes, turning halfway for even cooking.
- Serve and enjoy: Allow the tots to cool slightly before serving. They make a wonderful snack, side dish, or main attraction alongside a fresh salad.
Notes
For extra crunch, consider lightly pan-frying the tots in olive oil after baking.
