Description

Ingredients

  • 10g Fresh Ginger (2 tsp)
  • 10 Garlic Cloves
  • 700ml Chicken Stock (3 cups)
  • 5 Spring Onions
  • 8 Chicken Thighs
  • 3 Tbsp (45 ml) Sweet Soy Sauce
  • White Pepper, to taste
  • 30ml Vegetable Oil
  • 1 Tbsp (15 ml) Sesame Oil
  • 2 Tsp (10 ml) Toasted Sesame Seeds
  • 70ml Water (1/4 cup + 2 tbsp)
  • 1 Cucumber
  • 500g Cooked Beef
  • Sambal or Chilli Garlic Sauce, to taste


Instructions

  1. Crush the ginger and garlic, then place them in a pot with the chicken stock and heat over medium flame. Clean the spring onions, slice the green parts thinly, and split the white parts in half lengthwise. Add the white parts to the stock. Allow the stock to gently bubble and warm while you proceed with the other steps.
  2. Place the chicken thighs in a container with the sweet soy sauce, then flavor with white pepper to taste. Let them sit to absorb the flavors.
  3. Pour the vegetable oil into a skillet with the green spring onion slices and heat on high. Once the onions are softened, transfer them to a bowl. Mix in the sesame oil and toasted sesame seeds, then put aside.
  4. Put the skillet back on medium-high heat, cooking the chicken for 7-8 minutes until they are golden and have slight char marks. Mix the leftover marinade with water and pour over the chicken. Cook until it thickens into a rich sauce.
  5. Meanwhile, wash and slice the cucumber thinly, then sprinkle with salt before serving. Warm up the cooked beef.
  6. Distribute the rice evenly into bowls. Pour the hot stock over the rice and arrange the chicken slices and cucumber on top. Finish with a drizzle of sambal or chili garlic sauce and the sesame spring onion mixture.
