Ingredients
- 1/2 cup (100g) granulated sugar
- 2/3 cup (150ml) heavy cream
- 3 1/2 tbsp (50g) unsalted butter
- A pinch of sea salt (optional)
Instructions
- Put the granulated sugar into a saucepan and let it melt over medium heat. Be careful not to insert anything into the pan, not even a spoon, to avoid ruining the caramel.
- Once the caramel reaches a nice amber hue, not too dark, turn off the heat immediately.
- To ensure even cooking, gently swirl the pan as the caramel melts, but avoid splashing it on the sides.
- Warm up the heavy cream (using a microwave, for instance) and pour it all at once, but carefully, into the caramel after removing it from the heat.
- Do not rush when pouring to prevent the caramel from overflowing.
- Next, add 50g of unsalted butter cut into small cubes, and whisk the mixture.
- Return the saucepan to low heat and whisk vigorously to fully dissolve any caramel pieces.
- Pour the caramel into a glass jar (a jam jar works perfectly).
