Ingredients

  • 1/2 cup (100g) granulated sugar
  • 2/3 cup (150ml) heavy cream
  • 3 1/2 tbsp (50g) unsalted butter
  • A pinch of sea salt (optional)


Instructions

  1. Put the granulated sugar into a saucepan and let it melt over medium heat. Be careful not to insert anything into the pan, not even a spoon, to avoid ruining the caramel.
  2. Once the caramel reaches a nice amber hue, not too dark, turn off the heat immediately.
  3. To ensure even cooking, gently swirl the pan as the caramel melts, but avoid splashing it on the sides.
  4. Warm up the heavy cream (using a microwave, for instance) and pour it all at once, but carefully, into the caramel after removing it from the heat.
  5. Do not rush when pouring to prevent the caramel from overflowing.
  6. Next, add 50g of unsalted butter cut into small cubes, and whisk the mixture.
  7. Return the saucepan to low heat and whisk vigorously to fully dissolve any caramel pieces.
  8. Pour the caramel into a glass jar (a jam jar works perfectly).

  • Be patient when melting the sugar to achieve a smooth caramel texture.
  • Warm up the heavy cream before adding it to the caramel to prevent seizing.
  • Whisk the caramel continuously while reheating for a silky consistency.
