Ingredients

  • 8 ounce (227 g) s orzo pasta
  • 2 pints cherry tomatoes halved and divided
  • 8 ounce (227 g) s fresh moz zarella pearls
  • 1/2 cup (120 ml) fresh basil leaves torn
  • 2 tablespoon (30 ml) s parsley freshly minced
  • 2 tablespoon (30 ml) s chives freshly minced
  • 1/3 cup (80 ml) olive oil
  • 3 tablespoon (45 ml) s balsamic vinegar
  • 2 cloves garlic minced
  • Kosher salt and freshly cracked black pepper to taste


Instructions

  1. Prepare the orzo by cooking it as per the package instructions until it reaches a firm yet tender texture. Drain and allow it to cool slightly.
  2. In a large mixing bowl, combine the designated ingredients for the dressing and whisk until they are thoroughly blended.
  3. Place the cooked orzo into the bowl with the dressing and mix well to coat the pasta.
  4. Set your oven to a temperature of 400 degrees. Place one pint of the halved tomatoes on a baking tray, drizzle with olive oil, and roast in the oven for 25 to 30 minutes. Once done, remove from the oven, let them cool, and season with flaky salt, pepper, and herbs.
  5. Incorporate both the roasted and fresh tomatoes, mozzarella pearls, and basil leaves into the bowl with the orzo and gently mix until everything is evenly distributed. Adjust the seasoning with more salt and pepper if necessary.
