Description

A delightful twist on classic banana bread featuring the rich flavors of brown butter and a sugar cookie crumble topping.


Ingredients

  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ¼ cup granulated sugar (for crumble)
  • 2 tablespoons unsalted butter, melted (for crumble)
  • ¼ cup all-purpose flour (for crumble)
  • ½ teaspoon vanilla extract (for crumble)
  • A pinch of salt (for crumble)


Instructions

  1. Melt the unsalted butter in a saucepan over medium heat until it turns a deep golden brown and develops a nutty aroma. Remove from heat and let cool slightly.
  2. In a mixing bowl, combine the browned butter and granulated sugar. Beat in the eggs and vanilla extract until smooth.
  3. Mix in the mashed bananas until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. For the crumble, mix melted butter, granulated sugar, flour, vanilla extract, and a pinch of salt until crumbly.
  7. Pour half the batter into a prepared loaf pan, sprinkle with half the crumble topping, add the remaining batter, and top with the rest of the crumble.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a moister loaf, consider adding an extra banana or reducing baking time slightly. Serve with warm butter or honey.
