A delightful twist on classic banana bread featuring the rich flavors of brown butter and a sugar cookie crumble topping.
Ingredients
- ½ cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon (optional)
- ¼ cup granulated sugar (for crumble)
- 2 tablespoons unsalted butter, melted (for crumble)
- ¼ cup all-purpose flour (for crumble)
- ½ teaspoon vanilla extract (for crumble)
- A pinch of salt (for crumble)
Instructions
- Melt the unsalted butter in a saucepan over medium heat until it turns a deep golden brown and develops a nutty aroma. Remove from heat and let cool slightly.
- In a mixing bowl, combine the browned butter and granulated sugar. Beat in the eggs and vanilla extract until smooth.
- Mix in the mashed bananas until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- For the crumble, mix melted butter, granulated sugar, flour, vanilla extract, and a pinch of salt until crumbly.
- Pour half the batter into a prepared loaf pan, sprinkle with half the crumble topping, add the remaining batter, and top with the rest of the crumble.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a moister loaf, consider adding an extra banana or reducing baking time slightly. Serve with warm butter or honey.
