Description

A creamy and comforting broccoli potato soup that evokes memories of cozy family dinners.


Ingredients

  • 2 cups broccoli florets
  • 2 cups diced potatoes
  • 4 slices bacon, chopped
  • 1 cup shredded cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and aromatic.
  3. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
  4. Stir in the broccoli and cook for an additional 5-7 minutes until tender.
  5. Use an immersion blender to puree the soup until smooth or transfer to a blender in batches.
  6. Stir in the heavy cream and shredded cheese until melted and well-combined. Season with salt and pepper to taste.
  7. Top with reserved crispy bacon before serving.
