Description
A creamy and comforting broccoli potato soup that evokes memories of cozy family dinners.
Ingredients
- 2 cups broccoli florets
- 2 cups diced potatoes
- 4 slices bacon, chopped
- 1 cup shredded cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and aromatic.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce to a simmer. Cook until the potatoes are tender, about 15 minutes.
- Stir in the broccoli and cook for an additional 5-7 minutes until tender.
- Use an immersion blender to puree the soup until smooth or transfer to a blender in batches.
- Stir in the heavy cream and shredded cheese until melted and well-combined. Season with salt and pepper to taste.
- Top with reserved crispy bacon before serving.
