Ingredients

  • 1 tablespoon (15 ml) vegetable oil
  • 5 onion, chopped
  • 1/4 cup (60 ml) vegetable oil
  • 1/4 cup (30 g) all-purpose flour
  • 480 ml milk
  • 480 ml chicken stock
  • 360 g coarsely chopped broccoli florets
  • 240 ml matchstick-cut carrots
  • 1 stalk celery, thinly sliced
  • 600 g shredded sharp Cheddar cheese
  • salt and ground black pepper to taste


Instructions

  1. Get everything ready for cooking.
  2. Heat 1 tablespoon of vegetable oil in a frying pan over medium-high heat. Add the chopped onion and cook, stirring, until it becomes soft and translucent, around 5 minutes. Set it aside.
  3. In a large pot on medium-low heat, mix 1/4 cup of vegetable oil with the flour, whisking continuously. If needed, add a bit of milk to prevent the flour from burning, for about 3 to 4 minutes.
  4. Slowly pour in the milk while whisking constantly, then add the chicken stock and let the mixture come to a gentle boil.
  5. Allow it to cook until the mixture thickens, which should take around 15 to 20 minutes.
  6. Add the broccoli florets, matchstick-cut carrots, sliced celery, and the sautéed onions to the pot; let it all simmer until the vegetables are soft, approximately 10 to 15 minutes.
  7. Mix in the shredded Cheddar cheese until it melts completely, and season with salt and black pepper according to your preference before serving.
