Ingredients
- 1 tablespoon (15 ml) vegetable oil
- 5 onion, chopped
- 1/4 cup (60 ml) vegetable oil
- 1/4 cup (30 g) all-purpose flour
- 480 ml milk
- 480 ml chicken stock
- 360 g coarsely chopped broccoli florets
- 240 ml matchstick-cut carrots
- 1 stalk celery, thinly sliced
- 600 g shredded sharp Cheddar cheese
- salt and ground black pepper to taste
Instructions
- Get everything ready for cooking.
- Heat 1 tablespoon of vegetable oil in a frying pan over medium-high heat. Add the chopped onion and cook, stirring, until it becomes soft and translucent, around 5 minutes. Set it aside.
- In a large pot on medium-low heat, mix 1/4 cup of vegetable oil with the flour, whisking continuously. If needed, add a bit of milk to prevent the flour from burning, for about 3 to 4 minutes.
- Slowly pour in the milk while whisking constantly, then add the chicken stock and let the mixture come to a gentle boil.
- Allow it to cook until the mixture thickens, which should take around 15 to 20 minutes.
- Add the broccoli florets, matchstick-cut carrots, sliced celery, and the sautéed onions to the pot; let it all simmer until the vegetables are soft, approximately 10 to 15 minutes.
- Mix in the shredded Cheddar cheese until it melts completely, and season with salt and black pepper according to your preference before serving.
