Description

A hearty broccoli cheddar soup that combines fresh broccoli and creamy cheddar cheese for a comforting meal.


Ingredients

  • 4 cups of fresh broccoli florets
  • 1 cup of chopped onion
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 3 cups of shredded sharp cheddar cheese
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg (optional)


Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Incorporate the broccoli florets and vegetable broth. Bring the mixture to a gentle boil and reduce the heat, simmering for about 10-15 minutes until the broccoli is tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a standard blender in batches.
  5. Return the blended soup to the pot. Stir in the heavy cream, salt, black pepper, and nutmeg if using. Heat on low until warm.
  6. Gradually add the shredded cheddar cheese, stirring until melted and creamy.
  7. Taste and adjust seasoning if necessary. Serve hot with crusty bread for a complete experience.

Notes

For a little spice, consider adding cayenne pepper or crushed red pepper flakes. Save some cheddar to sprinkle on top before serving for extra flavor.
