Description
A hearty broccoli cheddar soup that combines fresh broccoli and creamy cheddar cheese for a comforting meal.
Ingredients
- 4 cups of fresh broccoli florets
- 1 cup of chopped onion
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of heavy cream
- 3 cups of shredded sharp cheddar cheese
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of nutmeg (optional)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Incorporate the broccoli florets and vegetable broth. Bring the mixture to a gentle boil and reduce the heat, simmering for about 10-15 minutes until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the mixture to a standard blender in batches.
- Return the blended soup to the pot. Stir in the heavy cream, salt, black pepper, and nutmeg if using. Heat on low until warm.
- Gradually add the shredded cheddar cheese, stirring until melted and creamy.
- Taste and adjust seasoning if necessary. Serve hot with crusty bread for a complete experience.
Notes
For a little spice, consider adding cayenne pepper or crushed red pepper flakes. Save some cheddar to sprinkle on top before serving for extra flavor.
