Easy to prepare breakfast pancake poppers that are fluffy and delicious, perfect for busy mornings.
Ingredients
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F and grease a mini muffin pan.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla.
- Gently combine the wet and dry ingredients, being careful not to overmix.
- Scoop the batter into the muffin pan, filling each cup about two-thirds full.
- Bake for 10-12 minutes until golden brown.
- Cool slightly and serve warm with syrup.
Notes
You can add a pinch of cinnamon or fresh fruit chunks for more flavor. Store any leftovers in an airtight container in the refrigerator for up to three days.
