A delightful and hearty breakfast dish that transforms leftover rice into a flavor-packed meal with crispy bacon, scrambled eggs, and green onions.
Ingredients
- 4 pieces of bacon, diced
- 3 eggs, scrambled
- 2 cups of cooked rice
- 2 green onions, sliced
- Hot sauce (optional)
- Salt and pepper to taste
Instructions
- Cook the diced bacon in a nonstick skillet or cast iron pan over medium heat for about 6 minutes until crispy and golden brown.
- Drain all but 1 tablespoon of bacon fat from the pan.
- Pour the scrambled eggs into the pan, lower the heat to medium-low, and cook for about 2 minutes until soft but fully set.
- Combine the cooked rice and sliced green onions in the pan, stirring frequently for 3-5 minutes until heated through.
- Taste and adjust seasoning with salt and pepper as desired.
- Serve hot and drizzle with hot sauce for an added kick if desired.
Notes
For best results, use day-old rice to avoid clumping. Customize with your favorite vegetables or proteins.
