Description

A delightful and hearty breakfast dish that transforms leftover rice into a flavor-packed meal with crispy bacon, scrambled eggs, and green onions.


Ingredients

  • 4 pieces of bacon, diced
  • 3 eggs, scrambled
  • 2 cups of cooked rice
  • 2 green onions, sliced
  • Hot sauce (optional)
  • Salt and pepper to taste


Instructions

  1. Cook the diced bacon in a nonstick skillet or cast iron pan over medium heat for about 6 minutes until crispy and golden brown.
  2. Drain all but 1 tablespoon of bacon fat from the pan.
  3. Pour the scrambled eggs into the pan, lower the heat to medium-low, and cook for about 2 minutes until soft but fully set.
  4. Combine the cooked rice and sliced green onions in the pan, stirring frequently for 3-5 minutes until heated through.
  5. Taste and adjust seasoning with salt and pepper as desired.
  6. Serve hot and drizzle with hot sauce for an added kick if desired.

Notes

For best results, use day-old rice to avoid clumping. Customize with your favorite vegetables or proteins.
