Description
Delightful Brazilian cheese bread, or Pão de Queijo, features a crunchy exterior and a chewy, cheesy interior, perfect for any gathering.
Ingredients
- 1 cup whole milk
- 1/2 cup unsalted butter (1 stick)
- 1 tsp salt
- 2 1/2 cups tapioca flour (10 oz)
- 2 eggs
- 1 1/2 cups freshly grated Parmesan cheese
Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- In a medium saucepan, add the whole milk, unsalted butter, and salt. Heat until bubbles start appearing, then remove from heat.
- Stir in the tapioca flour with a wooden spoon until well combined.
- Transfer the dough to a stand mixer fitted with a paddle attachment. Beat for 3-5 minutes until smooth. Allow the dough to rest for about 10 minutes.
- Add the eggs to the dough one at a time, mixing for about 1 minute after each addition.
- Mix in the grated Parmesan cheese on medium speed until completely combined.
- Scoop the dough using a cookie scoop or tablespoon, forming small balls and placing them onto the prepared baking sheet.
- Bake for 15-20 minutes, until puffed and golden brown on top.
Notes
Allow the dough to cool slightly before adding eggs to prevent cooking them. Experiment with different cheese for variations.
