Description

A delightful snack combining tangy Greek yogurt and sweet blueberry compote, perfect for gatherings or as a refreshing treat.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)


Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat.
  2. Simmer for 5 minutes until blueberries soften.
  3. If using, dissolve cornstarch in water and stir it into the blueberry mixture to thicken. Remove from heat and cool completely.
  4. In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey or maple syrup if desired.
  5. Spoon yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
  6. Add a spoonful of cooled blueberry compote on top of each yogurt portion and swirl gently with a toothpick to create a marbled effect.
  7. Freeze molds for at least 180 minutes until solid.
  8. Remove frozen bites from molds and store them in an airtight container in the freezer. Let sit for 2–3 minutes before eating for the best texture.

Notes

Experiment with different sweeteners and fruits. For added crunch, consider topping with granola before freezing.
