Description

A delightful twist on a classic, this blueberry cream cheese French toast casserole is filled with creamy texture and bursting with juicy blueberries, making it the perfect breakfast for special occasions or cozy family gatherings.

Ingredients

  • 1 loaf French bread, cubed
  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Maple syrup (for serving)

Instructions

  1. Grease a 9×13 inch baking dish thoroughly.
  2. Beat the cream cheese until smooth and creamy in a mixing bowl.
  3. Whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined in a large bowl.
  4. Layer half of the cubed bread in the baking dish, then spread the cream cheese mixture and blueberries on top.
  5. Top with the remaining bread cubes and pour the egg mixture over everything, ensuring all the bread gets coated.
  6. Cover the dish and refrigerate the casserole overnight or for at least two hours, allowing the flavors to blend.
  7. Preheat the oven to 350°F (175°C).
  8. Bake uncovered for 45-50 minutes until golden and set.
  9. Serve warm with maple syrup drizzled over each piece.

Notes

Consider mixing in a pinch of nutmeg or a splash of lemon zest for added flavor. For a nutty twist, sprinkle chopped pecans or walnuts over the top before baking.
