Description

Delicious no-bake blueberry cheesecake protein bites that are high in protein and perfect for a quick snack or post-workout treat.


Ingredients

  • 1 cup rolled oats (old-fashioned or quick-cooking, gluten-free if needed)
  • 1/2 cup vanilla protein powder (whey, casein, or plant-based)
  • 1/4 cup freeze-dried blueberries, finely ground
  • 1/4 cup unsweetened applesauce (or mashed banana)
  • 1/4 cup cream cheese, softened (or vegan alternative)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 tablespoon chia seeds or flax seeds (optional)
  • 1/4 cup frozen blueberries (thawed and drained)
  • 1-2 tablespoons milk (dairy or non-dairy) as needed
  • 2 tablespoons cream cheese, softened (for glaze)
  • 1/2 teaspoon vanilla extract
  • 1-2 teaspoons powdered sugar (optional)
  • Fresh blueberries for garnish


Instructions

  1. Grind the freeze-dried blueberries into a fine powder using a blender or food processor.
  2. In a bowl, combine the rolled oats, protein powder, freeze-dried blueberry powder, and optional chia or flax seeds.
  3. In another bowl, whisk together the applesauce (or mashed banana), cream cheese, and honey or maple syrup until smooth.
  4. Add the wet mixture to the dry ingredients and mix until fully combined.
  5. Gently fold in the thawed and drained frozen blueberries.
  6. If the mixture seems too dry, gradually add milk, one tablespoon at a time, until it is rollable.
  7. Form the mixture into bite-sized balls and place them on a parchment-lined plate.
  8. In a small bowl, whisk the softened cream cheese with milk, vanilla extract, and powdered sugar until smooth.
  9. Refrigerate the protein bites for at least 30 minutes to firm up.
  10. Drizzle the prepared glaze over the bites and top with fresh blueberries.
  11. For the glaze to set, refrigerate the bites for an additional 10 minutes (optional).
  12. Enjoy these chilled bites as a wholesome snack.

Notes

Customize with different protein powder flavors or add nuts for crunch.
