Healthy and delicious blueberry cheesecake bites made with cream cheese, Greek yogurt, and packed with protein, perfect for a post-workout snack.
Ingredients
- 1 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 cup rolled oats
- 1 cup blueberry puree (fresh or frozen)
- 1/2 cup vanilla protein powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fresh blueberries
Instructions
- Mix the cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Add in the rolled oats, blueberry puree, protein powder, and salt. Stir until well combined.
- Gently fold in the fresh blueberries.
- Using your hands, form the mixture into small bite-sized balls and place them on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
