Ingredients
- 1/2 cup rolled oats
- 1 cup almond flour
- 2 scoops vanilla protein powder
- 1/4 cup cream cheese (softened)
- 1/4 cup Greek yogurt
- 2 tbsp honey or maple syrup
- 1/2 cup fresh or frozen blueberries
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond flour, and protein powder. Mix well to ensure the dry ingredients are evenly distributed.
- In a separate bowl, blend the softened cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and salt until smooth and creamy.
- Gently fold the blueberries into the cream cheese mixture, taking care not to crush them.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough-like consistency forms.
- Scoop out portions of the mixture with a tablespoon and roll them into small balls with your hands.
- Place the protein bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
