Description

Ingredients

  • 1 cup black beans (canned or cooked)
  • 1 cup rice (white or brown)
  • 1 sausage (smoked or andouille), sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: cilantro and lime wedges


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the garlic, cumin, and paprika, cooking for an additional minute.
  4. Add the sliced sausage and cook until browned.
  5. Stir in the rice, black beans, and broth.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
