A quick and delicious fried rice recipe that’s better than takeout, using leftover rice and fresh vegetables for a comforting dish.
Ingredients
- 2 cups cooked rice
- 2 tablespoons soy sauce
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons vegetable oil
- 2 eggs (optional)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add mixed vegetables and stir-fry for 3-4 minutes until tender.
- Push the vegetables to one side and crack the eggs into the pan, scrambling until fully cooked (if using).
- Add the cooked rice to the pan, mixing with the vegetables and eggs.
- Pour soy sauce over the rice, stirring to combine.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
Notes
Use cold, day-old rice for the best texture. Experiment with additional seasonings like garlic or sesame oil.
