Description

A quick and delicious fried rice recipe that’s better than takeout, using leftover rice and fresh vegetables for a comforting dish.


Ingredients

  • 2 cups cooked rice
  • 2 tablespoons soy sauce
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons vegetable oil
  • 2 eggs (optional)
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add mixed vegetables and stir-fry for 3-4 minutes until tender.
  3. Push the vegetables to one side and crack the eggs into the pan, scrambling until fully cooked (if using).
  4. Add the cooked rice to the pan, mixing with the vegetables and eggs.
  5. Pour soy sauce over the rice, stirring to combine.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.

Notes

Use cold, day-old rice for the best texture. Experiment with additional seasonings like garlic or sesame oil.
