Ingredients

  • – 200g/ 6 oz (1 fresh mozzarella cheese)
  • – 1/4 cup (60ml) basil pesto, preferably homemade, recommended but not essential
  • – 500g/ 1 lb (4 cups) cherry or grape tomatoes
  • – 2 tbsp (30ml) extra virgin olive oil
  • – 2 tbsp (30ml) onion, finely chopped, ~1/2 small
  • – 1/2 tsp (3 ml) cooking/kosher salt
  • – 1/4 tsp (1 ml) black pepper
  • – 2 tsp (10 ml) sherry vinegar (or apple cider or non-alcoholic white grape juice)
  • – 1/2 tsp (3 ml) salt flakes (or half the quantity for cooking/kosher salt)
  • – 1 tbsp (15ml) extra virgin olive oil, a good one is best, for finishing
  • – Few fresh basil leaves, for sprinkling
  • – Warmed crusty bread, for mopping


Instructions

  1. Allow the mozzarella to warm up by leaving it out of the refrigerator for half an hour, keeping it in its liquid.
  2. Set your oven to a temperature of 200°C/400°F (or 180°C if using fan-forced).
  3. For ten minutes, mix the cherry tomatoes with the extra virgin olive oil, finely chopped onion, salt, and pepper. Arrange them on a baking sheet and bake until they’re tender but not falling apart.
  4. Shift the tomatoes to one side of the baking sheet, then pour over the sherry vinegar without stirring.
  5. Carefully move the tomatoes onto a dish, arranging them in a single layer.
  6. Gently remove mozzarella from its liquid and place it atop the tomatoes.
  7. Drizzle the tablespoon of high-quality extra virgin olive oil across the dish. Scatter spoonfuls of basil pesto around. Sprinkle with salt flakes and fresh basil leaves.
  8. Present the dish with warm crusty bread for dipping.
  9. Choose someone to cut into the mozzarella. Use a serving spoon to break it open, allowing the creamy interior to flow out. Be sure to gather a bit of everything onto the bread and enjoy! Ensure the plate is wiped clean, as the juices are exceptionally flavorful.
