A delightful blend of chewy oats, sweet raisins, and ripe bananas in every cookie, perfect for any occasion.
Ingredients
- ½ cup butter (browned & cooled)
- ½ cup brown sugar (packed)
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ripe bananas (mashed)
- 2 cups all-purpose flour
- 1 cup rolled oats
- ½ teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ½ cup raisins
Instructions
- Brown the butter in a skillet over medium-low heat, swirling constantly for 2-3 minutes until golden brown.
- Set the browned butter aside to cool.
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the melted brown butter, brown sugar, and granulated sugar, stirring until well mixed.
- Add the egg, vanilla extract, and mashed bananas; stir until thoroughly combined.
- In another bowl, mix the flour, oats, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated.
- Fold in the raisins to evenly distribute.
- Using a medium cookie scoop, place mounds of dough onto a silicone mat or parchment-lined baking sheet.
- Press down gently on each cookie mound with your fingers.
- Bake for 10-11 minutes or until edges are golden brown and centers are set.
- Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
For chewier cookies, let the dough rest for a few minutes before baking. Store in an airtight container for up to a week.
