Description

A delightful blend of chewy oats, sweet raisins, and ripe bananas in every cookie, perfect for any occasion.


Ingredients

  • ½ cup butter (browned & cooled)
  • ½ cup brown sugar (packed)
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ cup raisins


Instructions

  1. Brown the butter in a skillet over medium-low heat, swirling constantly for 2-3 minutes until golden brown.
  2. Set the browned butter aside to cool.
  3. Preheat your oven to 350°F (175°C).
  4. In a medium bowl, combine the melted brown butter, brown sugar, and granulated sugar, stirring until well mixed.
  5. Add the egg, vanilla extract, and mashed bananas; stir until thoroughly combined.
  6. In another bowl, mix the flour, oats, baking soda, cinnamon, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated.
  8. Fold in the raisins to evenly distribute.
  9. Using a medium cookie scoop, place mounds of dough onto a silicone mat or parchment-lined baking sheet.
  10. Press down gently on each cookie mound with your fingers.
  11. Bake for 10-11 minutes or until edges are golden brown and centers are set.
  12. Let cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

For chewier cookies, let the dough rest for a few minutes before baking. Store in an airtight container for up to a week.
