Ingredients
- – 1 1/2 pounds (680 g) lean ground beef
- – 1 onion, chopped
- – 1 bell pepper, seeded and diced
- – 2 14-oz cans (800 g) kidney beans, rinsed and drained
- – 1 8-oz can (227 g) tomato sauce
- – 1 14-oz can (400 g) diced tomatoes
- – 1 cup (240 ml) water or beef broth
- – 2 teaspoons (10 ml) chili powder
- – 1 teaspoon (5 ml) sea salt plus more, to taste if needed
- – 1/2 teaspoon (3 ml) ground black pepper
Instructions
- In a large pot or Dutch oven, sauté the chopped onions in some olive oil until they become tender.
- Add the ground beef and cook on medium-high heat until it loses its pink color. If not using extra lean beef, remove excess fat.
- Combine the remaining ingredients, bring to a boil, cover, and let it cook on low heat for 20 to 30 minutes or until it’s ready to serve.
Notes
- Use extra lean ground beef to reduce the fat content of the chili.
- Taste the chili before serving and adjust seasoning with sea salt as needed.
- Enhance flavor with a dash of cayenne pepper or smoked paprika for a smoky kick.
