Description

Fluffy, golden pancakes that create warm family memories on cozy Sunday mornings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 1/4 cups whole milk
  • 1 egg
  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract (optional)


Instructions

  1. Melt the butter in the microwave for about 30 seconds, then set it aside to cool slightly.
  2. In a medium bowl, mix together all-purpose flour, baking powder, salt, and sugar until evenly combined.
  3. In another bowl, stir together the whole milk and egg.
  4. Create a well in the center of the flour mixture.
  5. Pour the melted butter and milk-egg mixture into the well.
  6. Using a wire whisk, stir everything together until just combined. The batter might appear slightly thick and lumpy, which is okay. Don’t overmix; you want to keep some texture.
  7. Allow the batter to rest for about 5-10 minutes while your skillet preheats.
  8. Lightly oil the skillet or griddle. Pour or scoop about 1/4 cup of batter onto the hot surface.
  9. Cook each pancake for 3-6 minutes on one side until bubbles form on the surface. Flip and cook the other side for an additional 3-6 minutes, until lightly golden brown.

Notes

Customize with fruits or chocolate chips. Store leftover pancakes with parchment paper in between.
