Fluffy, golden pancakes that create warm family memories on cozy Sunday mornings.
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 1/4 cups whole milk
- 1 egg
- 3 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract (optional)
Instructions
- Melt the butter in the microwave for about 30 seconds, then set it aside to cool slightly.
- In a medium bowl, mix together all-purpose flour, baking powder, salt, and sugar until evenly combined.
- In another bowl, stir together the whole milk and egg.
- Create a well in the center of the flour mixture.
- Pour the melted butter and milk-egg mixture into the well.
- Using a wire whisk, stir everything together until just combined. The batter might appear slightly thick and lumpy, which is okay. Don’t overmix; you want to keep some texture.
- Allow the batter to rest for about 5-10 minutes while your skillet preheats.
- Lightly oil the skillet or griddle. Pour or scoop about 1/4 cup of batter onto the hot surface.
- Cook each pancake for 3-6 minutes on one side until bubbles form on the surface. Flip and cook the other side for an additional 3-6 minutes, until lightly golden brown.
Notes
Customize with fruits or chocolate chips. Store leftover pancakes with parchment paper in between.
