Description

A classic comfort food that transforms simple evenings into cherished gatherings with its flaky crust and savory filling.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, chopped
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup butter
  • 1/3 cup flour
  • 2 cups chicken broth
  • 1/2 cup milk or heavy cream
  • 1 tsp thyme, dried
  • 1 tsp rosemary, dried
  • Salt and pepper to taste
  • 1 pie crust, for bottom and top

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Sauté onions and garlic in butter until fragrant.
  3. Add carrots, peas, and celery, and cook until softened.
  4. Stir in flour to create a roux and mix well.
  5. Gradually add chicken broth, stirring until thickened.
  6. Incorporate cooked chicken and milk or heavy cream, and season with herbs, salt, and pepper.
  7. Pour the filling into a pie dish and top with the pie crust.
  8. Seal edges and cut ventilation holes in the crust.
  9. Bake in the preheated oven for 30-35 minutes until the crust is golden brown.
  10. Allow to cool slightly before slicing and serving.

Notes

For a flakier crust, ensure the butter is cold when making the pie dough. You can add different vegetables to suit your family’s preferences.
