Ingredients
- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup celery, chopped
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/3 cup butter
- 1/3 cup flour
- 2 cups chicken broth
- 1/2 cup milk or heavy cream
- 1 tsp thyme, dried
- 1 tsp rosemary, dried
- Salt and pepper to taste
- 1 pie crust, for bottom and top
Instructions
- Preheat your oven to 425°F (220°C).
- Sauté onions and garlic in butter until fragrant.
- Add carrots, peas, and celery, and cook until softened.
- Stir in flour to create a roux and mix well.
- Gradually add chicken broth, stirring until thickened.
- Incorporate cooked chicken and milk or heavy cream, and season with herbs, salt, and pepper.
- Pour the filling into a pie dish and top with the pie crust.
- Seal edges and cut ventilation holes in the crust.
- Bake in the preheated oven for 30-35 minutes until the crust is golden brown.
- Allow to cool slightly before slicing and serving.
Notes
For a flakier crust, ensure the butter is cold when making the pie dough. You can add different vegetables to suit your family’s preferences.
