Ingredients
- 2 tbsp. vegetable oil, plus more for drizzling (30 ml)
- 1 medium yellow onion, chopped
- 3 cloves garlic, finely chopped
- 2 tbsp (30 ml). tomato paste
- 1 lb. ground beef (450 g)
- 1 1/2 c. cooked white or brown rice (300 g)
- 1 (14.5-oz.) can diced tomatoes
- 1 1/2 tsp (8 ml). dried oregano
- Salt
- Freshly ground black pepper
- 6 bell peppers, tops and cores removed
- 1 c. shredded cheddar cheese (90 g)
- Chopped fresh parsley, for serving
Instructions
- Place an oven rack in the center position and set the temperature to 400°F (200°C). Warm the oil in a large skillet over medium heat. Add the onion and cook, stirring every so often, until it becomes soft, about 7 minutes. Mix in the garlic and tomato paste, cooking and stirring until aromatic, approximately 1 more minute. Introduce the ground beef, breaking it apart with a wooden spoon, and cook until it loses its pink color, around 6 minutes.
- Incorporate the rice and diced tomatoes into the mixture, seasoning with oregano, salt, and pepper. Allow it to simmer, stirring occasionally, until the liquid slightly reduces, about 5 minutes.
- Place the peppers, cut side facing up, in a 13″ x 9″ baking dish and lightly drizzle with oil. Fill each pepper with the beef mixture. Cover the dish with foil.
- Bake the peppers until they become tender, about 35 minutes. Remove the foil, scatter with cheese, and bake further until the cheese is melted and bubbly, approximately 10 more minutes.
- Garnish with parsley before serving.
Notes
- Use brown rice instead of white rice for a healthier option with increased fiber and nutrients.
- Experiment with mozzarella or pepper jack cheese for a unique flavor twist.
- Add a dash of smoked paprika or chili powder to the beef mixture for an extra kick of flavor.
