Ingredients

  • 2 tbsp. vegetable oil, plus more for drizzling (30 ml)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp (30 ml). tomato paste
  • 1 lb. ground beef (450 g)
  • 1 1/2 c. cooked white or brown rice (300 g)
  • 1 (14.5-oz.) can diced tomatoes
  • 1 1/2 tsp (8 ml). dried oregano
  • Salt
  • Freshly ground black pepper
  • 6 bell peppers, tops and cores removed
  • 1 c. shredded cheddar cheese (90 g)
  • Chopped fresh parsley, for serving


Instructions

  1. Place an oven rack in the center position and set the temperature to 400°F (200°C). Warm the oil in a large skillet over medium heat. Add the onion and cook, stirring every so often, until it becomes soft, about 7 minutes. Mix in the garlic and tomato paste, cooking and stirring until aromatic, approximately 1 more minute. Introduce the ground beef, breaking it apart with a wooden spoon, and cook until it loses its pink color, around 6 minutes.
  2. Incorporate the rice and diced tomatoes into the mixture, seasoning with oregano, salt, and pepper. Allow it to simmer, stirring occasionally, until the liquid slightly reduces, about 5 minutes.
  3. Place the peppers, cut side facing up, in a 13″ x 9″ baking dish and lightly drizzle with oil. Fill each pepper with the beef mixture. Cover the dish with foil.
  4. Bake the peppers until they become tender, about 35 minutes. Remove the foil, scatter with cheese, and bake further until the cheese is melted and bubbly, approximately 10 more minutes.
  5. Garnish with parsley before serving.
