Delicious, nutritious muffins combining ripe bananas, oats, and protein powder, perfect for busy mornings or as satisfying snacks.
Ingredients
- 2 ripe bananas
- 1 cup oats
- ½ cup protein powder
- ¼ cup honey or maple syrup
- 2 eggs
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mash the ripe bananas.
- Add the oats, protein powder, honey or maple syrup, eggs, baking soda, baking powder, cinnamon, and salt, mixing until well combined.
- If desired, fold in the chopped nuts or chocolate chips.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
For sweeter muffins, feel free to adjust the amount of honey or maple syrup. Storing in an airtight container will keep them fresh for days.
