Ingredients

  • – 1 cup (240 ml) granulated sugar
  • – 1 teaspoon (5 ml) baking powder
  • – 3 cups (360 g) all purpose flour
  • – 1/4 teaspoon (1.25 ml) salt
  • – finely grated zest of 1 small lemon, optional, but so good!
  • – 1 cup (240 g) cold unsalted butter, cut into cubes
  • – 1 large egg
  • – 1/2 teaspoon (2.5 ml) pure vanilla extract
  • – 4 1/2 cups (675 g) chopped fresh berries, see note
  • – 1/2 cup (120 ml) granulated sugar
  • – 4 teaspoons (20 ml) cornstarch
  • – juice of 1 small lemon


Instructions

  1. Set your oven to 375°F. Prepare a 9×13 baking dish by lining it with foil or parchment paper and coating it with butter or a non-stick spray.
  2. Using a hand mixer or stand mixer equipped with a paddle attachment, blend the sugar, baking powder, flour, and salt. Incorporate the lemon zest, butter, egg, and vanilla, and mix on low until the butter is distributed into small bits and the mixture is crumbly.
  3. Pour a bit more than half of this crumbly mixture into the base of the prepared dish. Press the mixture evenly into the pan using your hand or the bottom of a measuring cup.
  4. Carefully mix all the filling ingredients together until they are well combined.
  5. Evenly distribute the berry mixture over the pressed crust, then sprinkle the remaining crumbly dough over the berries.
  6. Place in the oven and bake for about 40-45 minutes, or until the top is a light golden hue and the berries are bubbling. Move the dish to a wire rack to cool completely. For neater slices, chill in the refrigerator before cutting.
