Ingredients

  • 6 bell peppers (red, yellow, or green)
  • 15 ml (1 tbsp) olive oil
  • 450 g (1 lb) lean ground beef
  • 1 medium onion, chopped
  • 1 teaspoon (5 ml) 7 spice
  • 240 ml (1 cup) rice, uncooked
  • 5 ml (1/2 tsp) salt
  • 5 ml (1/2 tsp) cinnamon
  • 25 ml (1/4 tsp) black pepper
  • 240 ml (8 oz) tomato sauce
  • 2 garlic cloves, minced
  • Toasted pine nuts for serving
  • Chopped parsley for serving


Instructions

  1. Set your oven to 375°F and lightly coat a baking dish with cooking spray.
  2. Trim ½ inch off the top of each bell pepper and discard the stems. Remove the inner core and seeds. Arrange the cleaned peppers in a 9×13 inch baking dish, cover with the trimmed tops, and bake for 15 minutes. Take them out and let them cool.
  3. While the peppers are in the oven, warm olive oil in a large pot over medium heat. Add the ground beef, chopped onion, and 7 spice. Season with salt and pepper and cook until the beef is fully browned, around 7-10 minutes.
  4. Stir in the rice, then add cinnamon, salt, and black pepper. Mix thoroughly and pour in 2 cups of water. Let it simmer, then reduce the heat, cover, and cook for 15-20 minutes until the rice is cooked through.
  5. Fill the peppers with the beef and rice mixture all the way to the top. Pour tomato sauce into the baking dish, adding minced garlic and enough water to achieve your desired consistency.
  6. Cover the stuffed peppers with their tops or use foil to cover the dish. Bake in the preheated oven for an additional 20 minutes until the sauce is bubbling and the peppers are tender.
  7. If you like, garnish with toasted pine nuts and chopped parsley before serving.
