Ingredients
- – 12 ounces (340 g) egg noodles, uncooked
- – 2 teaspoons (10 ml) olive oil
- – 1 1/4 lbs (567 g) lean ground beef (90% lean)
- – 1 onion, finely chopped
- – 2 teaspoons (10 ml) minced garlic
- – salt and pepper to taste
- – 16 ounces (454 g) canned tomato sauce
- – 15 ounces (425 g) can diced tomatoes, drained, I prefer to use the small diced (petite cut) variety
- – 2 teaspoons (10 ml) Italian seasoning
- – 2 cups (200 g) shredded cheddar cheese
- – 2 tablespoons (30 ml) chopped parsley
- – cooking spray
Instructions
- Start by bringing a pot of salted water to a boil, then add the egg noodles and cook them as directed on the package. Set your oven to preheat at 400 degrees F.
- As the noodles are cooking, warm up the olive oil in a large skillet over medium-high heat.
- Place the ground beef into the skillet and cook it for 4-5 minutes, using a spatula to break the meat into small pieces.
- Include the chopped onion and minced garlic in the skillet, cooking for another 5 minutes until the onion is soft and the beef is fully cooked. Add salt and pepper to your liking.
- Mix in the tomato sauce, drained diced tomatoes, and Italian seasoning with the beef, stirring well to blend everything.
- After draining the noodles, add them to the skillet with the beef mixture and toss everything together.
- Transfer the beef and noodle blend into a 9″x13″ baking dish that has been sprayed with cooking spray. Scatter the shredded cheddar cheese on top.
- Bake the dish for 10-15 minutes until the cheese is fully melted. Garnish with chopped parsley before serving.

- Consider using whole wheat egg noodles for added fiber and nutrients.
