Ingredients

  • – 2 lbs (900g) Salmon Filet
  • – 2 tbsp (30 ml) Beef Fat
  • – 1 tsp (5 ml) Onion Powder
  • – 1 tsp (5 ml) Garlic Powder
  • – 1 tsp (5 ml) Chili Powder
  • – 2 tsp (10 ml) Garlic Paste
  • – Garlic Salt and Pepper, (as desired)
  • – 3/4 cup (180ml) Beef Fat
  • – 1/2 cup (120ml) Thai Sweet Chili Sauce
  • – 1 tbsp (15 ml) Hot Sauce
  • – 1 tbsp (15 ml) Soy Sauce
  • – 1 tsp (5 ml) Agave Syrup
  • – 1 clove Garlic, (grated or minced)


Instructions

  1. Warm up your oven to 450°F.
  2. Begin by drying the salmon with a paper towel and take off the skin. (If your salmon is frozen, ensure it’s fully defrosted before skinning.) With a sharp blade, create an incision between the skin and flesh, gripping the skin firmly with one hand and guiding the knife underneath with the other. It should peel away with ease. If any skin remains, carefully trim it away.
  3. Slice the salmon into chunks about 1-1.5 inches big and transfer them to a sizable bowl.
  4. Combine mayonnaise, the spices, and garlic paste in a separate small bowl. Stir well, then sprinkle the salmon pieces with garlic salt and black pepper.
  5. Pour the mayo blend over the salmon pieces, making sure they are thoroughly covered. Arrange the seasoned salmon on a baking tray in a single layer, keeping them 1-2 inches apart. (Avoid crowding the tray. Distribute the salmon evenly for optimal crispiness.)
  6. Bake in your preheated oven for 10 minutes, then switch to broil for 2-3 minutes until they achieve a golden-brown color. Monitor closely during broiling to prevent burning.
  7. As the salmon cooks, prepare the bang bang sauce by thoroughly mixing the sauce ingredients together. Once the salmon is done, drizzle the sauce over the top.

Notes

  • Consider marinating the salmon in the mayo spice mixture for 30 minutes before baking for enhanced flavor.
  • Adjust the spiciness of the bang bang sauce to your liking by adding more or less hot sauce.
  • For a sweeter sauce, increase the agave syrup in the bang bang sauce.
