- 2 eggs, beaten

- 2 tablespoons oil

Instructions
- Heat the oil in a large pan over medium heat.
- Add the mixed vegetables and cook until tender.
- Push the vegetables to one side of the pan, and add the beaten eggs to the other side, scrambling them until fully cooked.
