Description

A flavorful, easy-to-make Bang Bang Chicken bowl featuring sautéed chicken, vibrant veggies, and a creamy spicy sauce.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (your choice of white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook your rice according to the package instructions until fluffy.
  2. Cut your chicken breast into bite-sized pieces and season with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat.
  4. Add the chicken pieces to the skillet and sauté for about 6-8 minutes until golden brown and cooked through (internal temperature of 165°F).
  5. In a small bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice to create the sauce.
  6. Toss in the mixed veggies and sauté for an additional 2-3 minutes until tender.
  7. Remove from heat and pour the sauce over the chicken and veggies, stirring to coat evenly.
  8. Serve over cooked rice, garnishing with extra sriracha or chopped green onions if desired.

Notes

Modify the spice level of the sauce to suit your taste and experiment with different veggie combinations.
