Ingredients

  • 8 ounces cream cheese (226 g) softened
  • 1 1/2 cups shredded cheddar or your favorite cheese (150 g)
  • 2 tsp (10 ml) horseradish (use one tsp, taste, add 2nd if desired)
  • 1 TBSP milk (15 ml)
  • 1 pound beef bacon, be sure to get mild peppers (450 g)
  • 1/3 cup grated vegetarian parmesan cheese (30 g)


Instructions

  1. Set the oven temperature to 375°F.
  2. Combine the softened cream cheese, shredded cheese, and 1 teaspoon of horseradish using a hand mixer; taste and add the other teaspoon if needed. Blend in the tablespoon of milk.
  3. Rinse the peppers thoroughly and dry them with a towel, then cut them lengthwise from the stem to the tip. Use a spoon to remove the seeds and the inner ribs. Arrange them on a baking sheet covered with parchment paper.
  4. Evenly distribute the cheese mixture into each pepper half.
  5. Top with the grated vegetarian parmesan cheese.
  6. Place in the oven and cook for 12-15 minutes.
  7. The dish is ready when the cheese is bubbly and the peppers are tender when pierced with a fork.
