Description

Delicious and wholesome banana oatmeal bars made with oats, ripe bananas, and rich peanut butter, perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups rolled oats
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 2 ripe bananas (about 1 cup mashed)
  • ½ cup peanut butter
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • ⅓ cup dark chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, cinnamon, salt, and baking powder.
  3. In another bowl, mash the bananas, then add the peanut butter, maple syrup, and vanilla extract. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Fold the dark chocolate chips into the mixture.
  6. Pour the mixture into the prepared baking pan and spread it out evenly with a spatula. For an extra touch, sprinkle a few more chocolate chips on top.
  7. Bake in the preheated oven for about 20-25 minutes, or until the edges begin to turn golden brown.
  8. Let the bars cool in the pan for 10 minutes before removing and slicing.

Notes

For added texture, feel free to include nuts or seeds. Adjust sweetness based on preference, and try different nut butters if desired.
