Description
Delicious and fluffy muffins made with ripe bananas and rich chocolate chips, perfect for breakfast or as a snack.
Ingredients
- 2 ripe bananas
- 1 cup chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin.
- In a large bowl, mash the bananas.
- Add butter and mix well.
- Stir in sugar, eggs, and vanilla extract until combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture until just combined.
- Fold in chocolate chips and walnuts.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
Using very ripe bananas enhances sweetness. You can add a sprinkle of cinnamon for extra flavor.
